Ingredients:
  • This recipe should be cooked outside on the grill.
  • Fish should be cooked to 145 degrees.


  • 4 - 6 to 8 oz. fish fillets
  • 2 Lemons, cut into wedges
  • 1/2 stick Butter, melted


  • Blackened Seasoning:
  • • 1 Tablespoon Paprika
  • • 1 teaspoon each, Black Pepper, White Pepper, and Cayenne Pepper
  • • 1 teaspoon Garlic Powder
  • • 1 teaspoon Onion Powder
  • • 1/2 teaspoon Oregano
  • • 1/2 teaspoon Thyme
  • • 1 teaspoon kosher salt

  • Steps:
  • In a small sauce pan melt the butter
  • Thoroughly mix the blackening spices
  • Start to heat a large cast iron skillet over high heat until it is very (white) hot.
  • Dip the fish fillets into the melted butter and generously sprinkle the spices on to each side of the fish. Press the spices into the fillets.
  • Place the fillets in the hot skillet
  • Cook the steaks until the bottoms become slightly blackened, turn the fillets and cook the other side till they are blackened
  • Serve immediately
