Ingredients:
  • 2 lbs. ground lean beef -- browned and drained
  • 2 large onions, diced
  • 1 large bell pepper, diced
  • 3 cloves minced garlic
  • 5 tbsp. chili powder
  • 1 tsp. salt
  • 2 tsp. pepper
  • 1 tsp. cumin
  • 1 tsp. oregano
  • 1 tsp cayenne
  • 15 oz diced tomatoes with juice
  • 6 oz tomato paste
  • 1/2 cup of water (or beer)
  • 3 tbsp. corn flour (or all purpose flour if you don't have corn flour) and a little cold water to make a paste
  • 3 cans (10 oz.) pinto and/or kidney beans rinsed and drained

  • Steps:
  • Brown meat and vegetables, drain, combine remaining ingredients (except beans) in crock-pot.
  • Cover; cook on low for 7 hours, add corn flour/water paste, stir, add beans, continue to heat for 1 hour.
  • Serve with cheese, diced onion, green onion tops, sour cream, tortillas, cold milk.
  • Serve next day leftovers with rice.
