Ingredients:
  • 2 Tbsp. canola oil (or other) 2 onions, chopped (or one very large) 5 cloves garlic, minced 1/2 tsp. thyme 64 oz. chicken broth (can use 64 oz. water with 8 chicken boullion cubes instead) 2 chicken breasts - cut up and pre-cook with onions and garlic 1 carrot, diced 4 scallions, chopped (optional) 4 oz. egg noodles (can also use rice)

  • Steps:
  • Saute onions, garlic, and diced chicken breasts. Add 64 oz. chicken broth and thyme. Bring to a boil. Cover and simmer approximately 1 hour. Add diced carrots, scallions and noodles or rice - cook until they tender.
